Expect a denser texture. Fresh milled recipes won’t be as fluffy as recipes with regular white flour. I personally love the dense, chewy texture and find it more satisfying!
Nope! Many whole grain bakers prefer freshly milled grains, but it is not necessary for baking a whole grain recipe. You can purchase whole wheat flour or another whole grain flour at the grocery store for these recipes.
What’s the difference between whole wheat and whole grain?
Flour is considered whole wheat when it’s made with the entire kernel of the wheat berries (including the bran and germ) rather than just the endosperm. Whole wheat flour is one type of whole grain flour, but the term “whole grain” also includes other grains, such as spelt, barley, or buckwheat.
Does fresh milled flour taste different?
The flavor of fresh milled baked goods is similar to that of those made with white flour, but it is more nutty, earthy, and complex. Where fresh milled flour recipes differ the most is in the texture. White flour is refined to include only one part of the wheat berry, while whole wheat flour uses the entire kernel, including the bran and germ. This makes whole wheat and whole grain recipes a little denser and less soft, with a coarser texture. Many people, myself included, prefer the texture and flavor of freshly milled whole wheat bread!
