If you’re craving a nostalgic and delicious snack, you are going to love this recipe! You can whip up your own homemade vanilla wafers with fresh milled flour in less than 30 minutes with simple, wholesome ingredients.
I’m always on the hunt for snacks I can make from scratch for my kids (and for me!).
I need them to be kid-friendly, made with wholesome ingredients, and — most importantly — easy to make!
These vanilla wafers fit the bill, and I absolutely love that I was able to make another classic favorite with 100% freshly milled flour.
These simple yet delicious cookies are packed with the flavors of real vanilla extract, creamy butter, and freshly ground wheat berries. They blow the store-bought cookies out of the water, but are similar enough to satisfy a craving.
We love dipping them in milk, using them to scoop nut butter, or packing them up for an on-the-go snack. These vanilla wafers with fresh milled flour are a recipe I’ll certainly be making on the regular!

Why You’ll Love This Recipe
- Easy recipe: Like I said, you can whip up a batch of these wafers in less than 30 minutes with ingredients you already have stocked in the pantry. It’s so simple, and a great recipe to get the kids involved.
- Classic flavor: These homemade vanilla wafers taste a lot like the classic store-bought version, but naturally, they are so much better. It’s hard for a packaged snack to beat from-scratch baked goods with fresh ingredients!
- Kid-friendly: Your kids are sure to love these fresh milled vanilla wafers! They are delightfully simple and just sweet enough.
Key Ingredients
- Soft white wheat: My go-to wheat berry for non-yeasted baked goods like cookies or fresh milled brownies. You can also use hard white wheat (see the notes below).
- Vanilla: Don’t cut corners with this ingredient! Real, pure vanilla extract makes all the difference.
- Butter: This will give the cookies a rich and buttery flavor that is truly delicious. Higher quality butter is always best; I like Kerrygold whenever possible.

Tips + Notes
- When baking with fresh milled flour, I always recommend measuring by weight instead of volume for the best accuracy. Weigh the flour after it’s been milled; don’t go by the weight of the wheat berries.
- You can make these with hard white wheat; just be sure to measure by weight, not volume. You should end up with about 1 ½ cups of hard white wheat flour.
- If you don’t have a standup mixer, you can make these just fine in a mixing bowl with a wooden spatula.
- *Every oven is different, so please adjust cooking times accordingly. I suggest checking the wafers at around 10 minutes.
