These vanilla wafers fit the bill, and I absolutely love that I was able to make another classic favorite with 100% freshly milled flour.

These simple yet delicious cookies are packed with the flavors of real vanilla extract, creamy butter, and freshly ground wheat berries. They blow the store-bought cookies out of the water, but are similar enough to satisfy a craving.

We love dipping them in milk, using them to scoop nut butter, or packing them up for an on-the-go snack. These vanilla wafers with fresh milled flour are a recipe I’ll certainly be making on the regular!

  • Soft white wheat: My go-to wheat berry for non-yeasted baked goods like cookies or fresh milled brownies. You can also use hard white wheat (see the notes below).
  • Vanilla: Don’t cut corners with this ingredient! Real, pure vanilla extract makes all the difference.
  • Butter: This will give the cookies a rich and buttery flavor that is truly delicious. Higher quality butter is always best; I like Kerrygold whenever possible.

How to Make Vanilla Wafers with Fresh Milled Flour

Step 1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.

Step 2. In the bowl of a stand-up mixer, beat together the butter and sugar on medium-low speed until combined.

Step 3. Add the egg and vanilla extract and mix again until well combined.

Step 4. In a separate bowl, whisk together the flour, baking powder, and salt.

Step 5. With the mixer off, add the flour mixture and milk to the wet ingredients, then mix on medium speed until combined. Do not overmix!

Step 6. Shape the dough into small balls, lightly flatten, and space evenly on your lined baking sheet.

Step 7. Bake for approximately 12 minutes* or until they are slightly crispy around the edges. Allow them to cool slightly before handling so they firm up.

Tips + Notes

  • When baking with fresh milled flour, I always recommend measuring by weight instead of volume for the best accuracy. Weigh the flour after it’s been milled; don’t go by the weight of the wheat berries.
  • You can make these with hard white wheat; just be sure to measure by weight, not volume. You should end up with about 1 ½ cups of hard white wheat flour. 
  • If you don’t have a standup mixer, you can make these just fine in a mixing bowl with a wooden spatula.
  • *Every oven is different, so please adjust cooking times accordingly. I suggest checking the wafers at around 10 minutes.

How do I store homemade vanilla wafers?

These cookies can be stored in an airtight container at room temperature for around 5 days! They also freeze very well for longer-term storage — just make sure they are completely cool and properly sealed in an airtight container to prevent freezer burn.

How do I know when my vanilla wafers are done baking?

The centers should look set and cooked, and the edges should be crispy and golden. Check out the photos for visual reference!

Can I double this recipe?

Yes, this recipe doubles very well. Just bake them in batches as needed so each tray gets proper airflow in the oven.
