These waffles with freshly milled flour are such a fun breakfast! Crispy on the outside with a soft and light interior, these are delicious with butter, maple syrup, and fresh fruit. Make them for a special Sunday brunch or freezer prep them for an easy weekday breakfast!

Last weekend, one of my kids requested waffles for breakfast, and I realized I hadn’t yet made a freshly milled waffle recipe!

We’ve been loving freshly milled pancakes and freshly milled Dutch babies so much that I almost forgot about waffles.

Of course, I dove right in to figure out how to achieve the perfect waffle with freshly milled flour.

I’ve made countless waffles with all purpose flour in the past, both my cast iron waffles and my dairy-free waffles. But it took some tinkering to figure out how to use fresh-milled wheat berries instead of all purpose flour.

I’m so happy with the results! These waffles have a wonderfully crispy yet soft texture, and they taste simply delicious. Give them a try, and do let me know what you think!

  • Soft white wheat flour: Soft white wheat has a finer texture and lower gluten content than hard wheat varieties, which makes it perfect for light, soft treats like waffles or fresh milled blueberry muffins.
  • Sugar: Just enough to add a slight sweetness to the waffles. If you want to make savory waffles, you can cut back the sugar by a half or so.
  • Salt: Just a pinch enhances the overall flavor.
  • Baking powder: Makes light and airy waffles with a nice density.
  • Milk: I recommend regular whole milk.
  • Eggs: Binds the batter and helps give the waffles a nice rise and a beautiful golden color!
  • Butter: Melted butter gives the waffles a delicious buttery flavor. Don’t forget to soften some extra butter to enjoy on top of the waffles!

How to Make Waffles with Freshly Milled Flour

Step 1. Preheat your waffle iron. In a large mixing bowl, whisk together flour, baking powder, salt and sugar.

Step 2. Add the milk, eggs, melted butter, and vanilla extract, then stir just until everything comes together. Let the batter sit for 5 to 10 minutes.

Step 3. Lightly spray your waffle iron with cooking oil, then pour about 1 cup of batter, depending on the size of your waffle iron, into the center of the iron, leaving about a half inch from the edge, and close the lid. Cook until crispy (see notes on cooking with a cast iron stovetop waffle iron).

Step 4. Use a fork to gently and carefully lift the waffle out. Repeat for the rest of the batter. Top with your favorite toppings and serve warm.

Tips + Notes

  • If the waffles seem a little flat and soft, you’ll likely need to add more flour. I would just add about 1/8 of a cup at a time to your existing batter.
  • This recipe makes approximately 10 waffles. The yield will depend on the size of your waffle iron.
  • If your waffle iron is non-stick, there is no need to grease it first!
  • If you are using a cast iron stovetop waffle iron, make sure you preheat it first, then carefully open the lid, add your batter, close the lid, and flip it immediately. Cook for 3 minutes, flip, and cook an additional 3 minutes. separate the two halves and remove the waffle.

Best Toppings for Waffles

Part of the fun of waffles is topping them! I typically keep it pretty simple with butter and maple syrup, but you can have a lot of fun with the toppings. Try one of these variations:

  • Fruit: Top your waffles with fresh fruit, or make a syrupy compote. They would also taste great with homemade persimmon pulp.
  • Nut butter: Slather on your favorite nut butter, and consider adding banana slices and honey too!
  • Yogurt: A dollop of yogurt on your waffles is surprisingly tasty and adds some extra protein. Choose your favorite flavor and pair it with fruit if you’d like.
  • Dessert waffles: Add some combination of chocolate chips, whipped cream, caramel sauce, hot fudge sauce, and fruit for a decadent and fun dessert!
  • Chicken and waffles: Pair them with Dutch oven fried chicken — it’s a match made in heaven.
  • Savory toppings: Make a hearty breakfast waffle topped with eggs, bacon, cheese, chives, and avocado. You can even use two waffles to make a breakfast sandwich, like my English muffin omelette sandwiches!

What should I do with leftovers?

Leftovers can be stored in an airtight container in the fridge for a few days. Reheat them in the microwave, toaster, or toaster oven. For longer-term storage, they also freeze well.

How do I freeze waffles?

Allow the waffles to cool completely, then stash them in a freezer-safe container with a piece of parchment paper between each waffle to prevent sticking. When you’re ready to enjoy them, put the waffles straight into a toaster oven (if you don’t have one, a regular toaster or the oven will also work), no thawing required.

Do cast iron waffle makers work?
