The easiest homemade snack that’s delicious and filling! These easy peanut butter muffins can be ready for the oven in 10 minutes, and they only require 4 ingredients. A grain-free pastry, they are completely flourless — without sacrificing flavor or texture!

With lots of small children in my family, having good snacks on hand is critical!

While most days I’ll quickly make something for a snack, it’s so helpful to have prepped foods that they can grab on their own, or that we can pack for an outing.

Muffins are a common choice for my snack prep. Whether it’s freshly milled lemon poppy seed muffins or whole grain blueberry muffins, my kids always love them.

These peanut butter muffins are new to my homemade snack rotation, and let me tell you: they have been a huge hit! They’re made without any flour and only 4 ingredients.

Similar to my no-bake protein balls and homemade granola bars, these muffins are an easy grab-and-go snack. They are easy to make, quick to eat, and very filling!

And with only 4 ingredients, they are seriously easy to whip up. I can have a batch in the oven in the time it would take to add snacks to my grocery order.

Whether you’re looking for gluten-free snacks or just want a quick and filling muffin option, these peanut butter muffins will definitely become a regular in your house!

  • Honey: Adds just enough sweetness to the muffins without using any refined sugar.
  • Eggs: Eggs are essential to this recipe as a binder and for the overall structure of the muffin.
  • Baking soda: To give the muffin a nice rise, even without any flour.

How to Make 4 Ingredient Peanut Butter Muffins

Step 1. Preheat oven to 350°F. Add peanut butter, eggs, honey, and baking soda to a medium-sized mixing bowl.

Step 2. Use a large spoon to combine the ingredients well.

Step 3. Scoop batter into prepared muffin tins about ¾ of the way full.

Step 4. Bake on the center rack for 15-18 minutes. Allow to cool before serving.

Tips + Notes

  • The batter is thick and won’t pour into your tins like typical muffin batter.
  • Your peanut butter should be just peanuts and salt, and require stirring when you first open the jar. The no-stir peanut butter is thicker and won’t work well in this recipe.
  • Instead of using paper liners, you can grease your muffin tins well and scoop the batter directly into them.
  • Feel free to add chocolate chips to this recipe! They would be a delicious addition.
  • These muffins freeze very well. Store them in an airtight container in the freezer and let them thaw at room temperature for 20-30 minutes or microwave them before enjoying.

You are looking for the centers to be set and no longer shiny. You can also do the toothpick check to ensure they are baked through. If your toothpick has wet batter on it, they need longer in the oven.
