Favorite Waffle Recipe | No Milk Needed!

When I made this recipe the first time some years ago, the sole purpose was because I found myself with a hankering for waffles and no milk in the refrigerator.
Following similar directions from my cast iron waffles with the main swap coming in the way of water rather than milk, I discovered that waffles really are pretty good both ways!

How to make waffles without milk
You will need a few simple ingredients, including:
- 2 1/4 cups of all-purpose flour
- 2 tablespoons of baking powder
- 1/4 cup of sugar
- 4 eggs
- 1 stick (8 tablespoons) of butter, melted (see dairy-free substitute below)
- 1/2 tablespoon of vanilla extract
- 1 1/2 cups of water
To make this dairy-free, swap out the butter for 6 tablespoons of coconut oil, melted.
Waffle recipe with no milk
- Begin by preheating your cast iron waffle iron and lightly oiling it.
- In a mixing bowl, combine all your dry ingredients and whisk them together thoroughly.
- Add your wet ingredients to the bowl and stir well with a wooden spoon until all the lumps are gone.
- Fill the waffle iron approximately 3/4 full with the batter.
- Cook for about 3 minutes per side or until the waffles are crispy and golden brown.

Tips for Success
Cooking waffles without milk is actually a pretty straightforward process. However, here are a few of my favorite tips to ensure your recipe is a success.
- Preheat your waffle iron. I used a cast iron waffle iron, but the process is still the same for an electric waffle maker. If you don’t preheat, the waffles will stick.
- Grease your waffle iron if you are using cast iron. Actually, most waffle irons, even nonstick, need a light greasing before use. I would suggest checking the manual for your specific model.
- Don’t over-fill! The batter will expand as it cooks. My rule of thumb is to fill it 3/4 of the way full. But that can change on a case-by-case basis. 🙂
- Wear oven mitts. If you are using a cast iron waffle iron, the handle will get hot!
Can I make this dairy-free?
You bet! Simply swap out the butter for 6 tablespoons of coconut oil, melted. Then, just follow the recipe the rest of the way.
