If chicken, or any food, is sticking to your cast iron, the first step is to make sure it is properly seasoned. If your cast iron looks dull and lighter black/grey instead of dark black and shiny, it probably needs seasoned. You can learn how to season cast iron here.
Once your cast iron is seasoned, make sure you preheat it before adding your food and use a little oil to prevent sticking. If you’re searing, your chicken may just need a little more time on the hot skillet, and it will release when it’s got a nice golden brown crust.
How do I know when my chicken is done cooking?
Chicken should be cooked to an internal temperature of 165°F to prevent foodborne illness. Dark meat, like thighs, taste better around 175°F. I strongly recommend an instant-read digital thermometer to check the center of your chicken.
