What goes into this recipe
Olive oil: Just a splash is all you’ll need. If you are not sure how much, 2 tablespoons would be plenty.
Thin sliced chicken breasts: If you don’t have thin sliced, cut them in half lengthwise for faster cooking and max flavor absorption. Just like my Thai Chicken curry!
Salt and pepper: Basic seasoning essentials. Don’t be shy with the salt here!
Cornstarch: Cornstarch is my favorite for this recipe, though you can use arrowroot powder as an alternative and if that is not available, all-purpose flour!
Soy Sauce: Mmm, yes, salty umami goodness. You can also swap this out for liquid aminos!
Honey: Sweetness and stickiness in one package. It’s the yin to the soy sauce’s yang.
Ginger: Fresh ginger is where it’s at. It adds a bright, spicy zing to this recipe.
Garlic: I use fresh garlic, which makes a world of difference to the end result. Don’t substitute for garlic powder or the sauce will just not be the same.
How to Make Honey Ginger Chicken
Step 1: Season chicken with salt and pepper, then coat evenly with cornstarch.
Step 2: In a small bowl, whisk together soy sauce, honey, grated ginger, and minced garlic. Set aside.
Step 3: Heat oil in a large skillet over medium-high heat. Add chicken and cook for 2-3 minutes per side until browned. Remove chicken, let cool slightly, then slice thinly.
Step 4: Pour the sauce into the same skillet and let it simmer, stirring often until it thickens slightly. Add the sliced chicken back to the skillet and toss it in the sauce.

Serve this over a bed of rice and garnish with chopped green onions, sesame seeds, or everything bagel seasoning.

- Meat thermometers are your friend: I don’t like dried-out chicken, and I don’t like raw chicken. So, if you have one, I suggest using an instant thermometer and pulling the chicken off the heat as soon as it’s cooked through.
