Instructions:

Divide the burger meat into fourths

Then, cut the cheese into one-inch cubes.

Press one of the cheese squares into the side of the burger and wrap the meat around it and shape it into a patty. Repeat for the rest of the burger patties.

Wrap each burger with bacon and place them into the skillet over medium-low heat.

Cook for 7-10 minutes on each side, or until bacon is crispy.

It will be challenging to check the internal temperature since the burgers are stuffed with cheese. So instead, watch the bacon. Once it is crispy on the top and bottom, that’s a tell-tale sign the beef is done.

Add your favorite toppings and enjoy! But be careful; the cheese will be steamy hot.

What to serve with cheese stuffed burgers?

Coleslaw and dutch oven french fries go great with cheeseburgers, as do these simple roasted parmesan garlic brussel sprouts or zucchini cakes.

Cooking Tips:

Cook low and slow to ensure the cheese melts and the meat cooks through

Toast the buns. Nobody wants a soggy bun, and toasting only takes a minute.

Leave it alone. Flipping the patty once will result in a juicier and tastier burger.

No need to add seasonings: If you do want to add your own personal touches, I’d recommend leaving out the salt; the bacon will account for plenty of salt.

Watch the temp: All stoves are different. If it looks like the bacon is crisping up before the burger is cooking through, you’ll want to adjust the temperature accordingly.

Can I use any kind of meat?

While a decent lean to fat ratio ground beef is most popular, nearly any ground meat will work great with this recipe. A few of my favorites include ground elk, venison, pork or turkey.

I do have a ground elk burger recipe and a venison burger recipe that I have tried stuffing with cheese to see how it would turn out. It was delicious!

Why is it called a juicy lucy?

It wasn’t until recently I found out that a cheese-stuffed burger was actually called a juicy lucy. Traditionally it is filled with American cheese and served with a little pink inside.

Rumor has it a customer at a Minnesota bar and grill ordered a double patty with cheese in the middle; upon receiving, he proclaimed, “that’s one juicy lucy.” And the juicy lucy burger was born!

Ingredients
  

  • 1 pound bacon
  • 1 small onion sliced (yellow or red onion)
  • 1 pound lean ground beef I use 93/7%
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 block cheddar cheese half of it shredded
  • 1 tbsp butter

Instructions
 

  • Line bacon on a baking sheet.
  • Bake in a preheated 350ยฐF oven for 15 minutes or until crispy.
  • While bacon is in the oven, sautee onions until lightlyย browned. Remove from heat.
  • Separate beef into 8 even sized portions.
  • Flatten each into thin patties and sprinkle with salt and pepper.
  • Top half of the patties with shredded cheese and one small block of cheese, about ยผ inch by ยฝ inch.
  • Top each with the remaining patties and press the edges together to seal it.
  • Heat your cast iron skillet, add butter and cook burger patties 10-15 minutes, total, flipping once.
  • Assemble your burger, add the bacon to the bottom of the bun, top with burger, onion and your favorite sauces.

Notes

  • This is a pretty easy recipe, but it does have a lot of steps. Please refer to Step-by-Stepย images in the post above for visual reference!
  • I like to add a small chunk of cheese in addition to the shredded cheese. Shredded cheese melts quicker, and the small hunk gives it some girth and extra cheese as you take your first bite.
  • Make sure you seal the edges of the top and bottom burger patty well. It’s not a huge deal if some cheese escapes, but we want to minimize it as best as possible.
