This is one juicy lucy (a real name for this recipe, I promise!) recipe that MUST be added to your weekly meal rotation. The dinner table will be silent except for the munching and chomping on this special burger night.

Recipe Ingredients
- Ground Beef: I use 93% lean, but you can use whatever fat content you prefer.
- Cheese: It’s best to buy a block and grate it yourself for this recipe because we will be using both forms!
- Butter: The taste of high-quality grass-fed butter will go a long way in this recipe!
- Onion: Either yellow or red onion, based on your flavor preference. I go back and forth based on what I have on hand.
- Buns: You can use your favorite buns, but I love brioche buns with this recipe and highly recommend trying them!
Cheese Stuffed Burger Recipe
Step 1: Line bacon on a baking sheet. Its ok if it overlaps some!
Step 2: Bake in a preheated 350ยฐF oven for 15 minutes, or until crispy.
Step 3: While bacon is in the oven, sautee onions until lightly browned. Remove from heat and set aside.
Step 4: Separate beef into eight even-sized portions.
Step 5: Flatten each into thin patties and sprinkle with salt and pepper.
Step 6: Top half of the patties with shredded cheese and one small block of cheese, about 1/4 inch by 1/2 inch.
Step 7: Top each with the remaining patties and press the edges together to seal it.
Step 8: Heat your cast iron skillet, add butter and cook burger patties 10-15 minutes, total, flipping once. (see notes below)
Step 9: Assemble your burger, add the bacon to the bottom of the bun, and top with burger, onion, and your favorite sauces.

- Extra cheese, please! I like to add a small chunk of cheese in addition to the shredded cheese. Shredded cheese melts quicker, and the small hunk gives it some girth and extra cheese as you take your first bite.
- Sealed it up. Make sure you seal the edges of the top and bottom burger patty well. It’s not a huge deal if some cheese escapes, but we want to minimize it as best as possible.
- Low and slow. Cook low and slow to ensure the cheese melts and the meat cooks through. Always check the internal temperature of the meat before consuming it.
- Leave it alone. Flipping the patty once will result in a juicier and tastier burger.
- Toast the buns. Nobody wants a soggy bun, and toasting only takes a minute.
