- Buns: You’ll need buns for serving, plus all of your favorite burger toppings! I like to make whole grain burger buns when I have the time.
How to Make Brisket Burgers
Step 1. In a small bowl or container, combine the salt, smoked paprika, brown sugar, onion powder, garlic powder, and pepper.
Step 2. Form the ground brisket into 4 patties per pound. If you haven’t ground the brisket yet, see the notes below for tips on how to prep and grind it. Sprinkle the seasoning evenly over both sides of each burger.
Step 3. Heat a skillet over medium heat. Sear the burgers until a crust forms, then flip once and finish cooking to your desired doneness.
Step 4. Serve with your favorite burger toppings and enjoy!

- I like to pull the brisket out of the freezer two days in advance. By the time I’m ready to prep, it’s usually just slightly frozen, which is the perfect texture for slicing and grinding.
- To prepare your brisket, cut away any excess fat, then dice the meat into around 1″ cubes. Grind your brisket using the coarse setting. If you want a finer texture, you can run it through again with the fine blade.
- Feel free to grill the burgers if that’s your desired cooking method.

A big pot of dutch oven baked beans is an excellent choice, too, or boiled asparagus for a lighter option. Garlic parmesan brussel sprouts are a favorite in our house, and they pair beautifully with burgers.
