Butternut Squash Skillet With Bacon

Enjoy this salty bacon and squash skillet as a side dish or even the centerpiece for a tasty fall meal.

The bacon is cooked right in with the diced squash to make this both a one-dish meal and to flavor the squash.

With the thick cuts of bacon in every bite and topped with your favorite cheese-or default to cheddar, and this is a great way, if not the number one way to get your picky eaters to enjoy squash.

Butternut Squash With Bacon Recipe

Ingredients

  • Butternut Squash
  • Bacon, preferably thick cut
  • Cheddar cheese
  • Avocado Oil
  • Dried rosemary
  • Salt and Pepper

Choosing the bacon

Whenever possible, try using locally raised thick-cut bacon. Not only does it have the most flavor, it generally does not produce as much grease as typical bacon does.

Choosing the right squash

Butternut squash is generally the most available, but other squashes that go well with roasted bacon include carnival, honeynut, and zephyr squash.

Assembling the Squash and Bacon Skillet

Start out by peeling and cutting off both ends of the squash. Next, slice the fruit, (yes, squash is a fruit) down the middle (long ways) so you can scoop out and discard seeds.

Finally, lay them flat with the cut side down, and dice it into ½-1 inch cubes.

Lay the bacon out on the cutting board and slice into ½” pieces or so before transferring to a 12″ skillet.

Stir in the squash; then I like to drizzle it with avocado oil and season with only dried rosemary, salt and pepper.

Toss it all together with tongs or a small spatula until everything is well incorporated.

Bake in a preheated 375°F oven for 45 min. Once it’s done, top with cheese and let it sit for 10 minutes to allow the cheese to melt before serving.

Ingredients
  

  • 1 butternut squash
  • 1 lb fresh thick-cut bacon
  • 1 cup white cheddar cheese
  • 2 tbsp of avocado oil
  • ½ tbsp of dried rosemary
  • ½ tsp of salt
  • ¼ tsp of pepper

Instructions
 

  • Peel and cut ends off of the squash. Then slice it down the middle, discard the seeds, and dice it into small cubes.
  • Slice bacon into small ½" in pieces and transfer to a 10" cast iron skillet with the squash.
  • Drizzle the oil and sprinkle the seasonings over the top of everything.
  • Toss it together well with tongs.
  • Bake at 375°F for 45 minutes.
  • Top with cheese and let rest 10 minutes before serving.
