Growing up I wouldn’t say beef liver was a popular dish in our household. While my mom loved everything about liver and onions, she was definitely the only one.

Beef liver is rich in iron, which lends a distinct yet mildly bitter earthy flavor, with a uniquely tender texture that results from proper cooking techniques. 

It’s actually kind of similar to fried pork liver (I know, no one agrees) but with a MUCH milder flavor.

For the best way to cook beef liver, there are a few key steps to keep in mind. First and foremost, make sure the liver is properly thawed before cooking. 

Secondly, be sure to use medium heat when cooking the liver; too much heat can result in it becoming tough because of the increased risk of overcooking. 

Finally, be sure to season the liver with salt and pepper before cooking; this will help to enhance its flavor. 

In this beef liver stir fry recipe, you will be soaking the beef liver in milk and coating it in a seasoned flour mixture for a perfectly tender and flavor-packed finish. 

Storing and reheating beef liver

Beef liver stir fry leftovers can be stored in the refrigerator or freezer. The USDA recommends you promptly refrigerate cooked liver and use it within 1 to 2 days. 

Leftovers can be placed in the freezer for later use as well.

To reheat, gently pan-fry or microwave on low. An airtight container or Ziplock bag works well for food storage and thawing.

Choosing the right skillet 

Preferably stick with a cast iron skillet; I am using a 12โ€ณ skillet which fits all the liver strips quite nicely. Stainless steel pans will work; just be sure to keep an eye on the temperature.

Cast iron cookware can be intimidating, but with the proper care, you will be on your way, and it will surprise you just how easy it is to cook with cast iron!

And it’s surprisingly easy to clean!

How to cook beef liver

Ingredients 

  • 1 beef liver cut into strips 
  • 2 cups whole milk 
  • 1 cup flour 
  • 1 tsp each salt and pepper 
  • 2 tbsp of avocado oil 
  • 4 cloves of garlic, minced 
  • 1 ยฝ cups of frozen broccoli florets 
  • 1 thinly sliced bell pepper 
  • 2 carrots, cut into thin strips 
  • 1 tbsp of sesame seeds 
  • 2 tbsp of sliced almonds 
  • โ…› cup of soy sauce (or liquid aminos)
  • ยผ cup of teriyaki sauce 
  • Stir fry noodles 

Instructions 

  1. Prior to preparation, cut the beef liver into quarter-inch strips. Then, move the liver to a bowl or Ziplock bag and soak the liver in milk for 1-2 hours. 
  2. To begin, prepare the stir fry noodles as per package instructions. 
  3. Second, combine flour, salt, and pepper in a bowl. Run each strip of liver through the flour mix and set it aside. 
  4. Heat a large 12โ€ณ cast iron skillet over medium heat with oilโ€”Fry liver for about 30 seconds on each side to achieve a crispy crust. 
  5. Remove the meat to a plate and add the vegetables, garlic, sesame seeds and almonds. (add more oil if needed) 
  6. Once the vegetables begin to soften, stir the meat back in and add the soy and teriyaki sauce. Continue cooking until the liver is cooked through. 
  7. Finally, serve over prepared stir fry noodles and enjoy! 

Refrigerate or freeze leftovers in an airtight container. Don’t forget to use it promptly if refrigerated. Or placed in the freezer for later use. 

Recipe Variations

I get it; not everyone loves liver. Not to worry, you can substitute it for any beef, such as round steak, skirt steak, or use my cast iron flank steak.

You can also use shredded chicken like I do in my sweet and spicy chicken recipe. You’ll just want to cook it ahead of time and skip the first 4 steps of the recipe.

Ingredients
  

  • 1 beef liver cut into thin strips
  • 2 cups of whole milk
  • 1 cup of flour
  • 1 teaspoon each of salt and pepper
  • 1 tablespoon of avocado oil or cooking oil of choice
  • 4 cloves of garlic minced
  • 1 1/2 cups of frozen broccoli florets

  • Soak beef liver in the milk for 1-2 hours
  • P๏ปฟrepare noodles according to instructions on the package.
  • C๏ปฟombine flour, salt and pepper in a small bowl and run each piece of liver through it to coat.
  • H๏ปฟeat a 12" skillet over medium heat with oil. Add liver and sear for 30 seconds per side.
  • R๏ปฟemove the meat and add the garlic, vegetables, sesame seeds and almonds. Cook until the veggies begin to soften.
  • S๏ปฟtir the meat back in and add the sauces. Continue cooking until meat is cooked through.
  • S๏ปฟerve immediately

Notes

Adjust the sauce measurements to your personal preference. Or add in a dash of stir fry sauce for a tangy flavor!
