  • This recipe is super easy to make and perfect for parties.
  • Homemade baked pizza rolls are infinitely customizable. I love adding olives to mine, but you can make any flavor combo you want!

Recipe Ingredients

  • Thin pizza dough roll: I typically go with the chilled pizza dough like I do with my dutch oven pizza, but any dough will work.
  • Shredded cheese: Take your pick of cheeses here, but stick with low moisture cheese or might find your pizza rolls a bit soggy.
  • Mini pepperoni: I love using mini pepperoni, but you could also just chop up full size pepperoni if you prefer.
  • Pizza sauce: Any brand will work here, or try your hand at a homemade sauce!

Squares of raw pizza dough laid out on a table with sauce, cheese, and mini pepperoni on top.

Step 1: Roll out your pizza dough roll on a clean countertop. Make it as thin as possible without it tearing. Cut it into approximately 2 by 3-inch rectangles.

Step 2: Add a scoop of sauce, a pinch of cheese, and 2-3 mini pepperonis to the middle. To fold, grab opposite corners and fold over the top like a croissant.

Step 3: Then, take the opposite corners and fold into the middle to close off the openings.

Step 4: Transfer to a well-seasoned cast iron skillet before baking on the center rack at 400°F for approximately 25-30 minutes. Once the dough begins to turn golden brown on top, remove it from the heat.

Recipe FAQs

What pizza crust should I use?

There are several great options for a pizza crust. Almost any grocery store will carry frozen dough, rolled pizza dough, egg roll wraps, or pizza dough mix. I typically go with the chilled pizza dough like I do with my dutch oven pizza. But any dough will work.

What toppings can I use?

Whatever you like, just be sure not to overstuff so that everything can be sealed up inside the dough! Try substituting pepperoni for sausage, bacon, or ham. Or go the vegetarian route with your choice of veggies. Popular vegetable toppings include finely diced peppers, onions, mushrooms, and tomatoes. Everyone’s taste buds are different, and as you will see in the pictures, there are olives in half the rolls because I love olives!

How to make BBQ chicken pizza rolls?

Follow the same recipe above, substituting red sauce for BBQ sauce and pepperoni for chicken. Leftover rotisserie or shredded chicken breast are both great options. Try adding some diced red onion for extra flavor!

Do I need a dipping sauce?

While there is sauce inside the baked pizza rolls, you’ll probably want some extra on the side for dipping, yes. I love using more pizza sauce for dipping, but others might prefer marinara or ranch. It’s up to you!

Expert Tips

  • Do not overcook. I start watching the time 5 minutes before the timer is set to go off. As soon as the crust starts turning golden brown on top, I pull them out.
  • Keep the fillings to a minimum. These little delights hold together best when they’re tightly wrapped in on themselves.
  • Don’t overcrowd your skillet. Leave a little room between the rolls, as they will spread a bit as they cook. I learned this one the hard way the first time I made these!
