Sausage and egg breakfast skillet is one of my favorites to make in the morning. Made with lots of healthy proteins, vegetables, and potatoes, this dish will keep you full and energized until lunch.

I love making breakfast skillets for breakfast! They are easy to whip up, only take one dish, are filling, and super healthy. My kids are big eaters, so something filling is a must.

Filled with scrambled eggs, fresh sausage, diced potatoes and onions, this healthy breakfast skillet will quickly become a family favorite.

EASY SAUSAGE AND EGG SKILLET

My favorite part about this sausage and egg dish is that it is super easy to whip up. I love a skillet for breakfast because it is something you can prep the night before and whip up very easily in the morning.

CAST IRON BREAKFAST SKILLET

I love cooking in my cast iron skillets for a couple of different reasons. First off, I love that they are non-stick. If cared for properly, cast-iron skillets can be more non-stick than a Teflon pan.

Second, cast iron skillets hold in the heat, so cooking ahead is a-Ok in this skillet. It will keep your food warm until you are ready to serve.

And lastly, though I have many more reasons why I love cast irons, cast iron skillets leave traces of iron in your food. This is a great health benefit and a big bonus if you have an iron deficiency.

INGREDIENTS FOR THE BEST BREAKFAST SKILLET

  • 1 pound pork sausage
  • 4-6 red potatoes, diced
  • 1 small onion, diced
  • 12 eggs
  • Shredded cheese, optional

HOW TO MAKE SAUSAGE AND EGG BREAKFAST SKILLET

Start off by preheating your skillet. Cooking in a hot skillet is very important to make it non-stick. Once the skillet is piping hot, add in cooking oil. I use coconut oil, but you can use olive oil or avocado oil too.

While your skillet is heating up, you can dice up your potatoes and onions. I use red potatoes, but any potatoes will do.

Add the potatoes and onions to the skillet to pan-fry them. Cast irons are the best for making crispy potatoes!

In another cast iron pan, brown your sausage. You can use store-bought breakfast sausage, or you can make your own breakfast sausage. To make your own, brown a pound of ground beef, turkey, or pork. Then add in sausage seasonings, recipe below!

Once the potatoes are fork-tender, crack 12 eggs into the pan. Scramble and cook until eggs are almost done—about 5 minutes.

Add the sausage to the cooked vegetables and eggs. Stir to combine.

If desired, top with shredded cheddar cheese.

MAKE YOUR OWN BREAKFAST SAUSAGE

Brown one pound of meat (you can use beef, turkey, or pork).  

Stir in 1 teaspoon each of black pepper, Italian seasoning, garlic powder, onion powder, 1 1/2 teaspoons of salt, and 1/2 teaspoon of brown sugar.

MAKE AHEAD BREAKFAST SKILLET

You can make this dish ahead of time and store it in airtight containers for 5 days. I suggest portioning them out into glass oven safe dishes.

Then, in the morning, you can stick it in the oven to warm it up for a quick, healthy breakfast.

Or you can keep it all in one dish and scoop out what you want in the morning into a cast iron skillet to warm up. Cast irons are ideal for warming up breakfast skillets as they will crisp the potatoes back up.

You can prep this meal the night before by browning your sausage, dicing your onions, and shredding your cheese. In the morning, you will have very little work to have a delicious breakfast on the table!

VEGETABLE BREAKFAST SKILLET

You can make several variations to this recipe and add in more vegetables to add more nutrients. Try diced bell peppers, zucchini, mushrooms, or spinach. If adding in vegetables, do this at the same time as the onions.
