We love bone broth around here, especially in the winter months.

Of course, I love using it in stews, but it gets boring with the same types of broth, so we started experimenting with pork bone broth, and the newest addition is oxtail bone broth.

Ingredients

  • Oxtail: The tail from a cow makes an excellent beef broth, adding a more rich flavor. You can find oxtail at your local butcher shops.
  • Vegetables: I like to add carrots, onions, and garlic to a more flavorful broth, but if you have another favorite, throw it in too. 
  • The Best Seasonings: I always add 1 bay leaf, salt, Italian seasoning, ground black pepper and sage. 
  • Apple cider vinegar: Helps to break down the collagen, forming a more velvety texture.

Step 1. Prep the oxtail.

Start by rinsing the oxtail well. Then cut the onions and carrots into large chunks. 

On a wooden block are onions, carrots and garlic and in two small bowls are spices and apple cider vinegar.

Step 2. Add the oxtail to the pot.

In a large pot or dutch oven add your first and most important ingredient, the beef oxtail.

Step 3. Add the vegetables. 

Dump the chopped veggies into the pot along with the oxtail.

Step 4. Add the water. 

Fill with enough water to submerge the beef oxtail and veggies. I used cold water straight from our faucet. 

In a dutch oven filled with water are onions, carrots, and a oxtail.

Step 5. Spice up your roast.

Add your spices and apple cider vinegar to the pot and get ready for a long cooking time.

Tip: For an extra flavorful and savory broth, add an extra pinch of sea salt, sage leaves, and additional bay leaves.

Step 6. Cook your oxtail bone broth. 

Once you have added the ingredients to the pot, the next step is to bring it to a boil over medium-high heat.

After it begins to boil, cover and reduce the temperature to low heat and simmer for at least 3 hours, though slow cooking for longer is better. 

Note: This batch I simmered for 5 hours. I had a meeting I had to get to after cooking the broth, so I stuck the whole thing in the fridge before straining it. This is what it looked like in the morning!

Step 7. Strain the broth.

Grab yourself a mesh strainer and a large bowl. Set the strainer over the bowl and pour the pot of oxtail bone broth into the strainer, catching the veggies and oxtail.

Note: You can save the oxtail meat to use in oxtail pho or any soups.

My Favorite Ways To Use Oxtail Bone Broth

One way I love to use oxtail bone broth is as a substitute for broth in various savory recipes. I always enjoy changing up the flavor.

Instead of using your typical beef broth, we use our flavorful oxtail bone broth. It might just surprise you how great the addition is to add to many of your recipes. 

You can enhance the taste of parboiled rice by finishing the cooking process with this wonderful stock. It adds so much flavor to ordinary rice.

Some of my favorite soups recipes are classic venison stew, and ground pork chili. We substitute the beef broth and use our oxtail bone broth instead.

And if that isn’t enough for you, another delicious soup you can try is moose chili.

Proper storing and reheating

Allow the broth to cool at room temperature and then store it in airtight containers in the fridge or freezer.

I like to keep my bone broth in freezer-safe containers with tightly sealed lids. The broth can be kept in the fridge for up to a week and in the freezer for six months.

  • 1 oxtail
  • 1 bay leaf
  • 1/2 tablespoon of salt

  • 3 carrots quartered
  • 4 cloves of garlic peeled
  • 2 tablespoons of apple cider vinegar

Instructions
 

  • Rinse oxtail
  • Add the oxtail to the dutch oven.
  • Add your veggies.
  • Fill with water, just enoughย to submerge everything.
  • Add your spices and ACV.
  • Bring the pot to a boil.
  • Once boiling, cover and reduce the heat to simmer.
  • Allow it to simmer for at least 3 hours, though the longer, the better.ย 
  • Strain the broth.

Notes

Allow the broth to cool completely before storing in airtight container in the fridge or freezer.
If you're looking to pack as many nutrients into your bone broth as possible, then simmering it for a longer period of time is definitely the way to go. This batch I simmered for 5 hours, but I have done it in as little as 3 hours with great results.
Never leave the pot unattended, and use oven mitts, as the pot will be hot.
