I have a thermometer that clips to the side of my dutch oven. If you don’t have one with a clip, don’t sweat it. Just insert your instant thermometer into the hot oil from time to time to monitor the temp.
Oh, and one more thing, most dutch ovens are cast iron, with or without an enameled coating. These tips and techniques are for those such dutch ovens and not stainless steel, aluminum or ceramic.

I start by filling my dutch oven with about 1-3 cups of oil. This will largely depend on the size of the dutch oven, of course, and what you will be frying.
For the most part, a 1-3 inch depth is plenty. I then attach my clip-on thermometer and bring the heat to the desired temperature.
It’s worth noting heating the oil in a dutch oven is not the fastest thing in the world. It can take the better part of 15 minutes to reach the desired temperature depending on the amount of oil you are using.
3. The best temperature for deep frying
According to the spruce eats, the best temperature for frying is between 350°F and 365°F which is a small window, I know, so generally, I try to keep it between 350° and 400°F
So once the oil reaches the appropriate temperature, I carefully lower my food into the hot oil. Be sure you don’t overcrowd the pot, else you chance dropping the temperature too much at one time and crush any chance of developing a crispy crust.

Monitoring the temp is pretty self-explanatory but important nonetheless. Thats why a clip-on thermometer is so handy!

Finally, once the food you are cooking reaches the desired crispiness and internal temperature, use a slotted spoon or tongs to remove it to a cooling rack or paper towel or whatever you are using to get rid of the excess grease.
