Instructions
Begin by preheating your cast iron waffle iron and lightly oiling it.
In a mixing bowl, combine all your dry ingredients and whisk them together thoroughly.
Add your wet ingredients to the bowl and stir well with a wooden spoon until all the lumps are gone.
Fill the waffle iron approximately 3/4 full with the batter.
Cook for about 3 minutes per side or until the waffles are crispy and golden brown.
Notes
*For a dairy-free option, swap out the butter for 6 tablespoons of melted coconut oil.Don’t over-fill! The batter will expand as it cooks. My rule of thumb is to fill it 3/4 of the way full.If you are using a cast iron waffle iron, be sure to wear oven mitts, as the handle will get hot.
