Ingredients
1
tablespoon
of olive oil
2
pounds
of ground moose
1/4
cup
of maple syrup
2
cloves
of minced garlic
1
tablespoon
of dried thyme
1
tablespoon
of dried sage
1
teaspoon
of fennel
1 1/2
teaspoons
of sea salt
3/4
teaspoon
of ground black pepper
1/4
teaspoon
of paprika
Instructions
In a mixing bowl, combine all the ingredients and mix well.
Lay out a sheet of wax paper on the countertop and spread the sausage mixture evenly.
Cut out patties using a biscuit cutter or the rim of a cup.
Heat a large cast iron skillet over medium-high heat with a few drops of cooking oil.
Add the patties to the skillet and cook for 2-3 minutes per side, until golden brown and cooked through.
Notes
Don't overstuff the patties on the skillet. Cook in batches if needed.
Use a meat thermometer to ensure the internal temperature reaches 160°F for safe eating.
Allow the patties to rest after cooking to seal in their juices and flavors.
For a smokier taste, consider adding smoked paprika to the seasoning mix.
