Cast Iron Breakfast Casserole
Enjoy this skillet-baked breakfast casserole with savory sausage, potatoes, eggs and cheese.

Ingredients

eggs

of ground sausage
¼
cup
of milk
1
red bell pepper
chopped and deseeded
1
onion
diced
2-3
red potatoes
shredded
⅔
cup
of shredded white cheddar cheese

tsp
of salt
½
tsp
of pepper
Instructions
Saute peppers and onions with the sausage in the cast iron skillet over medium heat.
Shred 2-3 red potatoes using a cheese grater. Approximately 1 cup.
Whisk the eggs, milk salt and pepper in a small mixing bowl.
Stir potatoes in with the sausage and veggies, then pour the eggs over the top.
Bake @ 375°F for 30 minutes; after that, top with cheese and continue baking an additional 10 minutes or until cheese is melted and eggs are set up.
Let rest for 10 minutes before cutting into it.
