These saucy and flavorful sandwiches are a fun twist on classic sloppy joes! If you love buffalo chicken hot wings, you're going to love buffalo chicken sloppy joes.
Heat a 4–6 qt Dutch oven over medium heat. Add the butter, then the carrot, onion, and celery. Cook until the carrots are softened.
Add the ground chicken and cook, breaking it up with a spatula as it cooks. Continue cooking until the chicken is fully cooked through, about 8–10 minutes. Season with salt and pepper.
Stir in the tomato sauce, honey, Worcestershire sauce, and buffalo sauce.
Bring to a simmer, stirring frequently, and cook for 5–7 minutes.
Remove from heat and serve hot on hamburger buns with ranch and blue cheese.

This can cook up in a 12" cast iron skillet as well.
If you prefer more heat, adjust the buffalo sauce and tomato sauce to taste. Use less tomato sauce and more buffalo sauce, keeping the total amount of sauce the same.
I recommend toasting your hamburger buns if you have the time! It gives them a great flavor and helps prevent them from getting soggy.
Rather than buns, you can serve the buffalo chicken filling in wraps, lettuce cups, or with tortilla chips (like a dip). It would also taste great on a bed of dutch oven white rice. However you serve it, don't forget the ranch!
If you want to hide the veggies or minimize their texture, you can shred or mince them instead of dicing them.
This can also be made with ground turkey, ground beef, or shredded chicken. If you use ground beef, be sure to drain off the excess grease after browning it.
